Healthy Brownies

Here is a testimony from a client:

“I received 2 boxes of chocolate cherries for Christmas. I had my first one after lunch. Normally I would have eaten an entire box by now! This new way of eating has sure curbed a lot of my desires – especially the quantity. I love it! Never going back! Praise the Lord!” (12 weeks: lost 27 lb. and 21.75 in. and at 7 months: lost 35 lb. and 29.5 in.!!!!)

This is a great recipe to help curve the chocolate cravings & you even get your vegies!

Healthy Brownies
Preheat Oven to 350
Non Stick Cooking Spray
3 ounces semi-sweet chocolate (or bittersweet chocolate)
½ cup carrot puree
-- (After peeling and trimming the ends, steam for 10-12 minutes and then puree in a food processor for 2 minutes)
½ cup spinach puree
-- Steam for 30-40 seconds, then puree in a food processor
½ cup firmly packed brown sugar or Splenda brown sugar, or agave nectar
¼ cup unsweetened cocoa powder
¼ cup canola oil
2 Tsp pure vanilla extract
2 large egg whites
¾ cup oat flour (or all-purpose flour)
½ tsp baking powder
½ teaspoon salt

Preparation
1. Coat an 8x8 baking pan with cooking spray.
2. Melt chocolate in a double boiler, or over a very low flame.
3. In a large bowl, combine melted chocolate, vegetable puree, sugar, cocoa powder, margarine and vanilla. Whisk until smooth and creamy (1 – 2 minutes).
4. Whisk in egg whites. Stir in flour, baking powder and salt with a wooden spoon.
5. Pour batter into the ban and bake 35 to 40 minutes. Cool completely in pan before cutting into 12 bars
