Ratatoullie
I made ratatoullie tonight with rosemary chicken & sweet potato fries. What an awesome dinner!
Here is the ratatoullie recipe:
Ratatouille
Ingredients
1 tablespoons olive oil
3 cloves garlic, minced
2 teaspoons dried parsley
1 eggplant, cut into 1/2 inch cubes
Dash salt & Pepper
1/2 cup grated Parmesan cheese
2 zucchini, sliced
1 large onion, sliced into rings
2 cups sliced fresh mushrooms
1 green bell pepper, sliced
2 large tomatoes, chopped
1 tablespoon of Italian seasoning
Directions
1. Preheat oven to 350 degrees F (175 degrees C). Coat bottom and sides of a 1 1/2 quart casserole dish with olive oil spray or canola oil spray.
2. Heat 1 tablespoon olive oil in a medium skillet over medium heat. Sauté garlic until lightly browned. Mix in parsley and eggplant. Sauté until eggplant is soft, about 10 minutes. Season with salt & pepper to taste.
3. Spread eggplant mixture evenly across bottom of prepared casserole dish. Sprinkle with a few tablespoons of Parmesan cheese. Spread zucchini in an even layer over top. Lightly sprinkle with a little more cheese. Continue layering in this fashion, with onion, mushrooms, bell pepper, and tomatoes, covering each layer with a sprinkling of cheese. Sprinkle Italian seasoning on top.
4. Bake in preheated oven for 45 minutes.
This is an awesome low glycemic recipe. It can be a dinner in itself also!

leading a healthier lifestyle
Leading a healthy lifestyle is not always easy. Have you ever thought about what causes you to become unmotivated and unwilling to budge from your unhealthy lifestyle? Maybe it's because you need a boost- or most likely a kick in the rear!
It's very hard to reach your goals on your own. Having a coach not only keeps you accountable, a coach also helps you keep on track. A coach helps you pinpoint those things in your life that are keeping you from being your best, your happiest and your healthiest.
Sometimes we sabotage our efforts because we allow our emotions to get the best of us. The mind is definitely a battlefield but we can overcome if we can realize that we have control of our thoughts. You can't do it on your own. Our help comes from the Lord, the Maker of heaven & earth.
We are spirit, soul & body. All three must be in balance. With God's help and a little help from your coach, you can be all that you desire to be. It takes time, work & dedication. Don't give up on your dreams. The only way to fail is to give up!

Healthy Brownies
Here is a testimony from a client:
“I received 2 boxes of chocolate cherries for Christmas. I had my first one after lunch. Normally I would have eaten an entire box by now! This new way of eating has sure curbed a lot of my desires – especially the quantity. I love it! Never going back! Praise the Lord!” (12 weeks: lost 27 lb. and 21.75 in. and at 7 months: lost 35 lb. and 29.5 in.!!!!)
This is a great recipe to help curve the chocolate cravings & you even get your vegies!
Healthy Brownies
Preheat Oven to 350
Non Stick Cooking Spray
3 ounces semi-sweet chocolate (or bittersweet chocolate)
½ cup carrot puree
-- (After peeling and trimming the ends, steam for 10-12 minutes and then puree in a food processor for 2 minutes)
½ cup spinach puree
-- Steam for 30-40 seconds, then puree in a food processor
½ cup firmly packed brown sugar or Splenda brown sugar, or agave nectar
¼ cup unsweetened cocoa powder
¼ cup canola oil
2 Tsp pure vanilla extract
2 large egg whites
¾ cup oat flour (or all-purpose flour)
½ tsp baking powder
½ teaspoon salt
Preparation
1. Coat an 8x8 baking pan with cooking spray.
2. Melt chocolate in a double boiler, or over a very low flame.
3. In a large bowl, combine melted chocolate, vegetable puree, sugar, cocoa powder, margarine and vanilla. Whisk until smooth and creamy (1 – 2 minutes).
4. Whisk in egg whites. Stir in flour, baking powder and salt with a wooden spoon.
5. Pour batter into the ban and bake 35 to 40 minutes. Cool completely in pan before cutting into 12 bars

Overcoming Weight-loss Challenges, Recipes & Testimonials
Here is an exerpt from my book:
Weight loss is a life long struggle for so many. When I became a lifestyle coach I was amazed at how many people are so undisciplined in leading a healthy lifestyle. As author Hannah Whitehall Smith put it, “The greatest burden we have to carry in life is self; the most difficult thing we have to manage is self.” Training ourselves to lead a disciplined lifestyle takes work, especially in a world that says, “If it feels good do it!” Denying self is unpopular but necessary to leading a truly happy and satisfying life. Self discipline is a true friend that protects us and keeps us from a destructive lifestyle.
Many have tried to be disciplined by trying several fad diets, but have failed miserably. They may lose weight, but usually gain back even more than they started with! Their eating is as unhealthy as ever, they skip meals and fail to put exercise into their lifestyle.
I have had the privilege of coaching people and seeing their lives change. Not because of what I’ve said or done, but because they have finally realized they have control. It’s up to them to choose to change. Instead of letting the cookie control them, they make the choice to control themselves!
There is hope! I have seen unhealthy lifestyles of people that I’ve known for years change. These were people that had no desire to change at first until they realized how much better they felt after making minor, then major changes. They have made the effort and have won the battle. The mind is a battle field and we must constantly be on alert so as not to fall back into old habits.
In my coaching I assist my clients in changing lifestyle habits. The three areas we work on are: educating on eating healthy low glycemic foods, modifying behavior and exercise.
In this book I will not only have some tasty, healthy, low glycemic recipes, but I will also address some weight loss challenges my clients have experienced, (names have been changed for privacy). I will include testimonials from clients I have coached and clients that two of my business partners have coached.
You will read about the frustrations, failures and victories each has experienced while trying to lose weight and lead a healthier and more disciplined lifestyle. Read on and you will discover how many have overcome. You never know, you could also make the decision to transition into a healthier, happier you!
